Abstract Sourness is one of the five flavors. The sourness of foods is caused by the acidic compounds contained in them. The structures of the acidic compounds in different sour foods are different. Starting from the principle of sour flavor, the structure and properties of the acidic compounds contained in common sour foods were introduced.
