Abstract Sweetness, a kind of flavors that is related to happiness. Sweeteners interact with sweet taste receptors, which activate the reward area of the brain to releases dopamine. According to the different molecular structures, sweet molecules can be divided into sugars(sugar, sugar derivatives、sugar alcohols、glycosides), amino acids(dipeptides、proteins), sulfonamides and so on. This article will explain sweet molecules and their sweetness from the molecular structure level.
