Abstract Chaoshan Kungfu tea contains rich chemical culture. For a long time, in the breeding, planting, processing and tasting of Fenghuang Dancong tea, the people of Chaoshan paid close attention to the chemical substances including catechins, theanine, caffeine, soluble sugars, pigments and terpenoids etc, which affect the quality and flavor of tea, finely controlled the quantity and biochemical transformation of these chemical substances in production and processing in order to create unique quality and flavor, and explored a set of scientific brewing program according to the compositions of active components in tea. The culture of Chaoshan Kungfu tea fully showed wisdom of chemistry.
