Lipid is one of human.s elementary nutrition and the most important nutriment of brain. The article introduces the relation between the growth characteristic of brain and lipid metabolism; the structure and classification of lipids,and the benefit to the brain and intelligence. It aims at knowing lipid properly, takig lipid scientifically to improve intelligence and stimulating the qualityoriented education.

The flame of the alcohol burner could be divided into three parts, called inner-flame, mid- flame and outer-flame,respectively.What is the temperature of each flame? This problem is a quantitative one and it is difficultto be solved underthe traditional experiment conditions ofmiddle school. Hand-lab technolo- gy is theway to solve this problem.An experiment ofmeasuring the temperature of the three flames of an alcohol burner is introduced in this article.
