Abstract  Taking Shanxi mature vinegar, a national intangible cultural heritage, as an example, this paper explores the chemical changes and material basis of vinegar from the perspectives of fermentation technology, fumigation technology and aging technology in the unique production technology, uncovers the chemical mystery of mature vinegar with unique flavor and health care, and draws the distance between chemistry and life closer.
